I grow chenille in my zone 8 garden without protection from winter freezes.
The flowers are remarkably similar, but chenille doesn't turn colour as the amaranth is... Also, the seeds on the amaranth are going to be pretty obvious.
In the 3 years or so that I've had the acalypha pendula, I've not noticed any seeds.
