We use it a lot in nachos and other Mexican dishes.
In fact I have some in a large pot just coming up about 3'' and I hope to get some fresh before it gets too cold .
I have found frozen whole stems , then chopped as needed is ''Almost'' as good as fresh.

Anyone try the slow bolt type?

I have, but did not see much difference time wise, except fewer seeds .
..a balanced life is worth pursuit.
