@gardengus That's interesting, I had not thought of it, canning turkey. I've been trying to get chicken on sale. For the chicken I like to have legs and thighs for fatty type to make good broth. I cook mostly to done with lots of water, carrots, celery, onions in large pieces for extra flavor. I throw in 3 or 4 large breasts at the end until it's almost done. I canned half pint jars of all white meat so I could make chicken salad in summer. I canned mixed white/dark meat for use in my chicken and noodles. But as for turkey, I don't really have a lot of uses for canned turkey. My ex (many moons ago), made turkey jerky; now that's pretty good. We had a dehydrator though to make it in and with the purchase of the dehydrator came a lot of recipes, or how to. Have you ever made turkey jerky? I wonder how long it keeps?. That always got eaten fast ... it was made from leftover thanksgiving turkey.
