Okay, so I have sprayed the poison ivy with

The Round Up should have translocated down to the roots of the plants and killed them off so you probably won't need to dig them up but you certainly can if you want. If you dig them out you'll be assured the plants won't grow back. I'm not aware of any residual poison in the soil once you eradicate poison ivy but you can check with your local cooperative extension service or noxious weed control board to see what research they have on the subject.
