I planted this many years ago and it pollinates and is growing everywhere including my flower beds. How do I get rid of without killing other plants?

I'm afraid there's no easy solution. Anything that kills the Sweet William will also kill your other plants. The best approach is to dig it up, roots and all. The underground roots will spread as long as they are in the ground. If you are very careful, you can spot spray the Sweet William with Round Up but you'll need to shield your other plants from the spray. Even tiny droplets that drift over can damage your other plants. I'd vote for simply digging out the Sweet William plants.
