How do I eliminate (kill) very invasive Hummingbird vines which give off roots and pop up in unwanted places?

I'd attack the base of the plant with a vegetation killer such as Round-Up (be careful, it can kill other plants on contact). Each time a sprout pops up, cut it off and immediately paint Round Up on the stub. Repeat each time a new sprout pops up. It won't be easy, but once you've killed the roots you shouldn't have any more problems with it. Good luck with your eradication project!
