What can I do to stop the insects from eating my basil?

Aphids are most likely the insect pests and you should be able to hose them off the plant with a strong stream of water. Since you are going to consume the leaves of you basil, you won't want to spray them with insecticides. Insecticidal soap is made from the fatty acids of plants and may be safe to use - check the label to make sure. Best wishes with your basil.
