I have a hibiscus tree and bush that I bring in every year (I live in NJ). Is it possible to plant and maybe cover for the winter, any chance of surviving the winter?

There's no chance at all that the roots will survive your winter weather, even if you carefully cover the plant. The roots just are not hardy enough. Sorry!
