my wife planted cucumber and squash plant that are taking over garden. can i cut some runners without killing rest of plant?

You can pinch out the growing tips on all the stems to halt their progress. You can even completely cut off a few of the stems. It won't hurt the plant but doing so will reduce their production. Without new growth, no new flowers will appear and no fruits will develop. Best wishes with your plants.
