I have an evergreen on either side of my garage entrance that are trimmed in a poodle form (2 globes). One of them is now blocking the house number. Is it safe to trim the globes down to a smaller size?

You can trim the foliage slightly but don't remove too much. If you prune it back to bare stems, no new foliage will appear, but removing just an inch or two of foliage shouldn't harm them. Best wishes with your shrubs.
