I have a Star Gazer Lily that has grown approximately 1 1/2 feet every year for the past three years, it's now reached 6'10

There's nothing much you can do to regulate the height of your Stargazer Lily. It has grown to a standard size now that the bulb has enlarged. Wait until the stem dies down after your first frost and then dig the bulb and replant it. As long as the bulb is dormant, you can safely move it. If you can't move it this fall, you can move it in late winter or early spring, before it begins to develop roots. Enjoy!
