|Mushrooms grow where there is decomposing organic matter. It could be that there's a potato rotting under the potting soil or it might be that the potting soil itself is decomposing and providing food for mushroom growth. Either way, just pull the mushrooms out and loosen the soil to encourage fresh air, which will help it dry out a bit.
