What can I use that is eco-friendly to prevent weeds and grass from growing between the bricks in my sidewalks?
I do not wish to use harsh chemicals that pollute the earth.

You can apply a corn gluten meal based pre emergent herbicide to help keep weed seeds from germinating between the bricks. Start by removing all existing weeds and then applying the pre emergent. Some manufacturers include Preen, Manage, Barricade, Gallery, Nature?s Green, Tupersan, Corn Weed Blocker, Weed Ban, Dyna weed, Concern, Barricade, and Dimension. All are efficient and will keep weed seeds from sprouting. Best wishes with your landscape.
