Hi I have tomato plants that are really big (5 foot) and bushy. They are producing tomatoes now and are really healthy. Some people are telling me I should be cutting some the green leaves off so the energy of the plant goes into the tomatoes already in the process of ripening. What do you think?

I think you have enough summer weather left in the season to ripen those tomatoes without any trimming or pruning at all. If you take off leaves now you'll expose stems and fruits to sunshine they haven't experienced before which could cause sunscald. I'd just leave the plants alone for now. Best wishes with your harvest!
