I have been doing some research on this but not sure how to do it. Should we mix our own topdressing so we are sure not to get any weed seeds. Or just go with a soil conditioner from a nursery, which I think consists of leaves and such?

I'd topdress with compost or peat moss. If you aren't making your own compost, you can purchase pre packaged sterilized or pastuerized compost, or pure peat moss. Neither will contain viable weed seeds. If you can find a sterilized soil conditioner at a nursery, that will work as well.
