butternut squash and sweet potatoes - Knowledgebase Question

How can you tell when buternut squash is ready? The color is ok but it seems so early? Also how can you tell when sweet potatoes are ready to dig? Thanks

Butternut Squash is considered mature when the squash has turned a full tan color and the vines have died. The stem to the squash will be hard and dry. For storage leave about 2" of stem on the squash. You can begin harvesting your sweet potatoes as soon as the leaves start to yellow, but keep in mind that the longer they are left in the ground, the more vitamins they'll have. After a frost the vines will turn dark. At this point, the tubers should be harvested as soon as possible to prevent rot.
