Bamboo doesn't grow well in the Phoenix area - the air is just too dry. While I've seen a stand or two of bamboo in the area, most are ratty looking because of the wind and the dry air. You can grow some tall shrubs to provide shade and privacy. Some of the best include Cassia (grows upward of 8' tall), Emu bush, oleander, Mexican honeysuckle and Texas yellow bells. There are a few eucalyptus plants that will grow into shrubs if you keep them pruned. Hope these suggestions are helpful. Best wishes with your landscape.
