my sedum get tall about this time of year and start falling sideways from center. What can I do to prevent this?

It's a little late this year to prevent that but early next summer you can pinch the ends of the stems back to promote a bushy growth habit. With more stems on the plant, each stem will help hold up the other stems. You won't need to pinch much - just a half inch or so when the growth reaches about 4". Wait until an additional 4 inches of new growth appears and pinch out the tips of the stems again. Hope this information is helpful.
