How should we care for this over the winter without watering?

Mandevilla is a tropical plant that never really rests during the winter months so you'll need to keep it actively growing - which means bright light and water when the top of the soil begins to dry out. If you do not water it all winter long it will shrivel up and the roots will die. Wish I had a solution but other than asking a friend to care for the plant over the winter months I don't think you'll be able to revive it when you return.
