When do I plant:

garlic
onion sets
zucchini

since vine veggies take so much space, what can I plant with them that grow tall and now 'out'?

Summer squash such as zucchini should have been planted in August. If you're starting from seed you may not get a harvest before cold weather sets in. If you're planting transplants, you should still be able to plant them this month. Onions can go into the ground in October.
