both my orange and grapefruit trees have lots of fruit, but they look like they should be pruned--wild branches, etc. Can they be pruned with fruit on them?

Your citrus trees can be pruned at any time. If you want to save the fruit, either try to avoid pruning the branches that contain fruit, or wait to do your pruning when the fruits are ripe. Even if you have to sacrifice some of the fruits, you can prune now and it won't hurt your tree.
