We had 3 weeks of dry weather here in the Tampa fl area & I have two potted Viburnum plants on my back deck which I forgot to water. The leaves have turned brown. Should I prune back the stems to just below the dead leaves or just wait till spring?

I'd prune them back and keep them watered. If the roots were not too stressed you'll see new growth in a few weeks.
