hi i have a bunch of peppers on my pepper plants and some of them are soft, are they still good to eat? i haven't had time to pick them due to work and a busy schedule. please help

Soft peppers are past their prime and won't be crunchy if you eat them raw but should be tasty in cooked dishes. As long as the peppers are intact and you cut away any rotted areas, they're just fine to eat.
