How much of my perennials do I cut down in preparation for winter and do I cover them completely with mulch?

Wait until frost kills the tops of the plants down. This will signal them to go into dormancy. Once the tops are dead, prune them off at ground level and cover over the crowns of the plants with 4-5 inches of organic mulch. You can use compost, shredded leaves, pine boughs, pine needles or straw. In the spring, just rake away the mulch and the tops of the plants will regrow. Enjoy your garden.
