I live in Nebraska, we have had some lows overnight but not a hard freeze yet. When is the best time to trim back my hostas?

When the temperatures get cold enough the leaves of your hostas will die down on their own. After that happens you can trim them away from the plant and then cover over the ground with several inches of mulch. You can use any organic matter as a mulch in your garden.
