|I've just answered the first part of your question but now we need to address the large root you've found. In most instances removing an entire root won't harm a healthy shrub. It should have dozens of similar sized roots so the loss of one shouldn't cause a problem. Be sure you make a clean cut and cut it back far enough so that it is no longer in the way of the bed.
