Is it best to not prune anything now so the plants and trees get ready for winter or are you able to still don trimming?

Most plants will continue to grow during the winter season so pruning now is just fine. If you prefer to wait until late February, that's okay too. I generally prune in the fall and again in the spring. Unless we have a really cold winter, most trees, shrubs and perennials will just keep right on growing throughout the winter months. Enjoy your garden!
