Can you give me a list of which plum varieties pollinate with which other plum varieties?

European plums are generally self fertile but will set larger crops if a compatible pollinator is close by. European plums include Damson, Green Gage, Stanley, Italian, and Earliblue. Japanese plums need a pollinator. Here are the best companions:
Burbank (pollinate with Santa Rosa, Shiro or Satsuma); Elephant Heart (Santa Rosa is the best pollinator); Santa Rosa (use Shiro, Satsum or Burbank as pollinators); Satsuma (best pollinators are Santa Rosa, Shiro or Burbank). Redheart or Wickson are excellent pollinizers for all Japanese plums.
