My knock out rose has grown too big. It is about 6' tall and about the same wide. How much can I cut and when can I trim it?

You can prune your Knockout rose in late winter or early spring, just as you would a shrub rose. You can safely remove about half of the shrub at that time. If it is still overgrown you can prune it throughout the summer season by deadheading when the flowers are spent. Best wishes with your landscape!
