I checked with the Home Economist at Arizona State University Cooperative Extension and her answer was "When placed in a tightly-covered container, fresh lemon juice may be stored in the refrigerator for about 2-3 days. After that, it will begin to lose its flavor. Freshly-squeezed lemon juice can be frozen for up to 4 months; place it in ice cube trays for future convenience."

Enjoy your bumper crop of lemons!
