In Florida just experienced real severe cold. Sustained a lot of damage. Once I start pruning the damage, do I cut off just above or just below where the green starts?

I'd wait another two weeks before pruning, just to make sure the cold weather is completely gone for the season. When you do prune, make your cuts into live plant material - at least an inch or two below the obviously frost damaged plant parts and just above any newly emerging green sprouts. Best wishes with your plants!
