Which variety Kousa dogwood is best for zone 8, full sun, well-drained soil? Any pink varieties?
Fertilizer and water recommendations, disease and insect problems, etc.?

Dogwoods grow in zones 5-9 so your zone 8 landscape should be perfect for good growth. I'd plant Cornus florida, 'Cherokee Chief' (called the red dogwood but the flowers look pink to me!), Cornus florida rubra (common pink flowering dogwood) or the Satomi Dogwood, Cornus kousa 'Satomi', which produces deep pink flowers in April through May.
