What is the best cabbage to grow for sauerkraut?

In my experience, any variety of traditional head cabbage will make fine sauerkraut. Originally I think it was a method devised to avaoid wasting any of the older tougher heads, and a way of safely preserving the cabbage for a longer period of time. The secret to good sauerkraut is probably in the brine as much as in the cabbage.
