|Blackberry sweetness is largely a product of the variety, sunlight, proper watering, and ripeness.
Some varieties tend to be sweeter than others, a basic example being that thornless types tend to be more tart than thorny types. The more sunlight, the more carbohydrates and the sweeter the fruit. Shady growing conditions and cloudy days make for less sweet fruit.
Finally don't overwater the plants prior to harvesting and make sure and let the berries ripen fully. They turn black before they are fully sweet. Wait until the shiny black surface turns to a duller black and the berries almost fall off in your hand for optimum sweetness.
