What do the praying mantises eat as soon as they come out of their egg sacks? Do they eat each other?

Yes, the nymphs do eat each other. (Probably why we don't see the adult in great numbers!) They might also be dispersed by the wind, and then become solitary predators. They'll eat a large variety of insects including ants, caterpillars, flies, true bugs, bees and wasps. Praying mantis are considered to be beneficial insects and no control is necessary.
