Asparagus - Knowledgebase Question

I have asparagus plants that are about 3 years old. I noticed that they are about 2-3 ft tall but I see no spears. Have they, can they bolt? How and when will I harvest the spears?

Your asparagus crowns are mature enough to produce at least some edible spears. When the spears emerge in the early spring, you can harvest any that are larger in diameter that a pencil. Any you don't harvest will continue to grow and will develop the ferny foliage you see on your plants now. Leave the foliage to die back on its own this fall, then mulch your plants to protect them over the winter months. In the spring, when new growth begins, remove the mulch and harvest any spears that are larger in diameter than a pencil. As your plants continue to mature they will produce thicker spears and you can harvest over a longer period of time.
