Should you trim a sea holly (blue flowers) and can the flowers be dried?

You can cut back the fading flowers and stems on Eryngium (Sea Holly), or allow them to remain on the plant. The petals will fall from the flower leaving a cone-shaped center, which is sometimes dried and used in arrangements.
