Harvesting Rhubarb - Knowledgebase Question

This is the first year I have harvested stalks from my rhubarb. The stalks are STILL big and plentiful. I don't want to overharvest the first year. Should I stop now and let the rest go or is it okay to take them as long as I leave a reasonable amount for them to feed themselves for next year?

As long as you're harvesting only stalks that are 1" thick or thicker, there shouldn't be any problem with continued harvest. You're on the right track as far as leaving some on the plant to provide energy for the roots. Don't harvest anything less than an inch thick, and be sure to cut down any flower stalks that may appear, as soon as they appear.
