How can I tell when my celosia (red velvet) has reached maturity and is ready to be cut for drying purposes?

The best answer I can give you is to take a very close look every day and when they look ready to you, then cut. Find a few that are a bit precocious and watch them carefully so you know what to look for. You will want to cut just before the bloom peaks and definitely before it begins to fade.
