I have a friend who wants to freeze beets instead of pickling them, how would she do this?

According to the "Ball Blue Book Guide to Home Canning, Freezing and Dehydration" beets should be cooked before freezing. Leave 2 inches of stem on nice young beets, wash them, boil until tender. Cool and remove the skins, stem and tap root. Cut up if desired and place into freezer container. Freeze.
