Do I need to let the seed heads of my flowers dry on the stem before picking them for next year, or can I deadhead them for saving right after the petals fade and fall off?

In most cases it is better to allow the seed to ripen on the plant while the flower fades before you cut it off. For more detail about saving flower (and veggie) seeds you might want to take a look at a book or two, one I like is "Saving Seeds" by Marc Rogers ISBN 0-88266-634-7.
