According to the Ball Blue Book Guide to Home Canning, Freezing and Dehydration sweet potatoes can be frozen in several ways once they have been cured for at least a week and then washed. You may lightly oil and then bake at 350 until done, cool, then package and freeze. You may slice and parboil them, cool and then pack in sugar syrup with a bit of lemon juice and freeze, or you may bake, peel and then puree them adding a bit of water, sugar and lemon juice, then pack and freeze.
