I live in RI and it is considered zone 6. I notice that sweet potato mature in anywhere from 90 to 120 days. When would I plant sweet potato in order to give them the time to mature?

Generally you just have to wait to plant them when the soil has warmed. In some cases you will do better to use a raised bed located in a sheltered and warmer microclimate (reflected heat from a building or pavement can help) and might try warming the soil using black plastic. I suppose that's why it is generally considered a southern crop, but it's fun to try!
