Can I winterize water plants(Ex. Hyacinths,Water Lettuce, Parrots Feather, Lizards Tail) in a greenhouse, that would not initially make it through the cold winter in my area?

You can certainly give it a try! Set them in buckets or whatever large waterproof containers you have and see how they do. If the greenhouse is cool they will slow down dramatically but if it is a warm one they may even keep on actively growing for you.
