Holly berries, red crabapples, cranberries and so on can be strung with a needle and thread but unless they are kept quite cold they shrivel and look terrible. Rose hips, however, dry nicely and can be used year round for decorations. There are also numerous types of exotic berries sold by craft shops and dried flower suppliers which will look good over time.
