I live in Florida and have a heavy clay based soil, and I'm looking for a fast growing privacy shrub/tree that will seperate myself from my neighbors.

I would consider the Southern Wax Myrtle (Myrica cerifera), an evergreen shrub that tolerates a wide variety of soils and can grow tall enough to make an excellent screen plant.
