I planted grape hyacinths Oct 1, and it's now Nov 1st and
they are erupting from the ground. (the green stem Part around 2-3 inches ) what should I do? Do I cut off the growth or leave it? Will they bloom in the spring?

It's okay, leave them alone -- it's normal for grape hyacinths to send up foliage in the fall! They should bloom normally next spring.
