|I have just harvested my jerusalem artichokes (or sun chokes) and need to know how to store them. Last year I washed them and put them in plastic bags in the garage. They rotted. Should they be refrigerated? Would a rinse in a dilute purex solution retard rot?

|You can store the tubers just like you would potatoes. Don't put them in plastic, but dust off as much soil as you can and store them in an airy place that's dark and cool (about 45F.) Don't treat them with bleach. The reason they rotted was because they were sealed in plastic. Give them good air circulation and everything should be just fine.
