|I have been searching for some information on Jerusalem artichokes. I would very much appreciate if you could tell me if the Jerusalem artichoke is a starchy vegetable, like the parsnip, or rutabaga?

|Jerusalem artichokes are members of the sunflower family (Helianthus tuberosus). They're perennials and are grown as a commercial crop. The tubers are edible, sometimes called "sunchokes". The tubers are starchy and crisp and are cooked just like potatoes.
