Using Nuts - Knowledgebase Question

I have a Halls almond tree and recently purchased a Heartnut tree.When i harvest the nuts, do i need to roast them or use them the way they are.I'm new with this and don't know how to roast nuts.Can i just bag them and freeze them in their shell.

Most people will harvest the nuts and store them in their shells at cool room temperature if they plan to use them fairly soon (during the winter or spring). If not, to conserve space most people shell them first before packing and storing them in the freezer or refrigerator. Most recipes use raw nuts, but some call for lightly toasted nuts to enhance the flavor. To toast them simply place the shelled nutmeats on a cookie sheet and roast gently in the oven. Your cookbook will usually tell you the time and temperature for the recipe you are using. If not, toast a few at 300 degrees and start testing them every few minutes and see when you like the taste. It shouldn't take too long.
